Little Known Facts About Potatoes

Potatoes contain toxic compounds called glycoalkaloids (solanine and chaconine). The variety currently consumed by the majority of the population world wide has been bred to produce less of that toxic compound in comparison to its wild purple pigmented counterpart. This toxin is said to affect the nervous system and cause weakness and confusion. Cooking does reduce the level of glycoalkaloids present in the potato.
